Peanut Butter Chocolate Chip Cookies
Ingredients
- 1 cup brown sugar, packed
- 4 tablespoons (1/2 stick) salted butter, softened
- 1/4 cup vegetable shortening or coconut oil
- 1 large egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 cup peanut butter, smooth
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups chocolate chips
Instructions
Making the Dough
- In a large bowl, beat together brown sugar, butter, and shortening.
- Beat in the egg, followed by the egg yolk, and vanilla.
- Add the peanut butter and mix well.
- Mix in the flour, baking soda, and salt.
- Mix in the chocolate chips.
Baking the Cookies
- Preheat the oven to 325°F.
- Roll the dough into walnut-sized balls.
- Arrange about 2 inches apart on a baking sheet.
- Using a fork, press an X into the top of each cookie, flattening it to about half of its original thickness.
- Refrigerate the remaining dough while you bake the first batch.
- Bake the cookies for about 20 minutes.
- Repeat with the remaining dough, using cooled baking sheets.
