Peanut Butter Chocolate Chip Cookies

Ingredients

  • 1 cup brown sugar, packed
  • 4 tablespoons (1/2 stick) salted butter, softened
  • 1/4 cup vegetable shortening or coconut oil
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter, smooth
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups chocolate chips

Instructions

Making the Dough

  1. In a large bowl, beat together brown sugar, butter, and shortening.
  2. Beat in the egg, followed by the egg yolk, and vanilla.
  3. Add the peanut butter and mix well.
  4. Mix in the flour, baking soda, and salt.
  5. Mix in the chocolate chips.

Baking the Cookies

  1. Preheat the oven to 325°F.
  2. Roll the dough into walnut-sized balls.
  3. Arrange about 2 inches apart on a baking sheet.
  4. Using a fork, press an X into the top of each cookie, flattening it to about half of its original thickness.
  5. Refrigerate the remaining dough while you bake the first batch.
  6. Bake the cookies for about 20 minutes.
  7. Repeat with the remaining dough, using cooled baking sheets.
